Quick Mixes |
These "Quick Mixes" are to be used in other recipes. Brownie Mix 6 c. all-purpose flour 4 t. b.p. 4 t. salt 8 c. sugar 1 (8-oz.) Can unsweetened cocoa powder In a large bowl, combine all ingredients. Stir with a wire whisk until ingredients are evenly distributed. Put in a large airtight container. Label with date and contents. Store in a cool, dry place. Use within 10 to 12 weeks. Makes about 15 cups BROWNIE MIX. ************************************************** Snack Cake Mix 8 3/4 c all-purpose flour 2 T. b.s. 5 1/4 c. granulated sugar In a large bowl, combine all ingredients. Stir with a wire whisk until ingredients are evenly distributed. Divide mixture into six portions, about 2 1/3 cups each. Store in air tight containers. Label with date and contents. Store in a cool, dry place. Use within 10 to 12 weeks. Makes 6 packages or about 13 ½ c. SNACK CAKE MIX. ************************************************** Quick Mix 8 ½ c. all-purpose flour 4 T. b.p. 1 T. salt 2 t. cream of tartar 1 t. b.s. 1 ½ c. instant nonfat dry milk 2 1/4 c. veg. shortening In a large bowl, sift together all dry ingredients. Blend well. With a pastry blender, or heavy-duty mixer, cut in shortening until resembles cornmeal in texture. Put in a airtight container. Label with date and contents. Store in a cool dry place. Use within 10 to 12 weeks. Makes about 13 cups of QUICK MIX. ************************************************** Cookie Mix 8 cups all-purpose flour 2 ½ c. granulated sugar 2 c. brown sugar, packed 4 t. salt 1 ½ t. b.s. 3 c. veg. shortening In a large bowl, combine all dry ingredients and blend well. Using a pastry blender or heavy duty mixer, cut in shortening until mixture resembles cornmeal in texture. Put in air tight container and label with date and contents. Store in a cool, dry place. Use within 10 to 12 weeks. Makes 16 cups of COOKIE MIX. ************************************************** Corn Bread Mix 4 c. all-purpose flour 4 c. yellow corn meal 2 c. instant nonfat milk powder 2/3 c. granulated sugar 4 T. b.p. 1 T. salt 1 T. b.s. Mix In a large bowl, combine all ingredients. Stir with a wire whisk until ingredients are evenly distributed. Put in a large airtight container. Label with date and contents. Store in a cool, dry place. Use within 10 to 12 weeks. Makes about 10 cups of CORN BREAD MIX. ************************************************** Hot Roll Mix 5 # (20 cups) all-purpose flour 1 1/4 c. sugar 4 t. salt 1 c. instant nonfat dry milk. In a large bowl, combine all ingredients. Stir with a wire whisk until ingredients are evenly distributed. Put in a large airtight container. Label with date and contents. Store in a cool, dry place. Use within 6 to 8 months. Makes about 22 cups of HOT ROLL MIX. *************************************************** Hot Chocolate Mix 1 (25.6 – oz.) Pkg. Instant nonfat dry milk (10 2/3 c.) 1 (6- oz.) Jar powdered nondairy creamer 2 c. powdered sugar 1 (6 - oz.) Can instant chocolate drink mix Variation: Substitute 2 c. unsweetened cocoa powder for chocolate drink mix. Increase powdered sugar to 4 c. Combine all ingredients in a large bowl. Mix well. Put in a large airtight container. Label with date and contents. Store in a cool, dry place. Use within 6 months. Makes 17 c. HOT CHOCOLATE MIX To use: Mix 3 T. HOT CHOCOLATE MIX with 1 c. hot water. |
