Chicken and Rice

2 c. chicken stock
1 T. green onion, chopped
1 T. carrots, chopped
1 T. celery, thinly sliced
1 ** 12.5 oz can cooked, boned chicken
1 c. long grain rice
½ t. salt

In a Large boiler combine chicken stock and vegetables, bring to a boil. Add chicken and bring back to a boil. Add rice and salt, stir cover and turn burner off if using an electric store. (If using a gas stove, turn fire very low) Let sit for about 20 to 25 minutes. DO NOT OPEN OR STIR.
